We were going to do Pizza's tonight but my DH took my Daughter and I to Pizza Hut for lunch today while the boys were at school. So I am going to plan for a leftover night and try again on the pizza on Monday or sometime next week but yes we will do this recipe and we will post pictures and our responses!

Personal Pizzas!

These Personal Pizzas are great to make with your kids and to have them help you with!


Ingredients: Untensils:
English Muffins Table knife
Pizza Sauce Toaster
shredded mozzarella cheese Measuring Spoons
pepperoni or diced ham Microwavable plate and Microawable paper towel
pinapples Pot Holders
really whatever you want to add to your pizza
I am really making this up but I am looking in
a kids cookbook at my house for ideas.


1.Split English Muffin in half, using a table knife. Toast both halves in the toaster.

2.Top each toasted muffun half with 1 tablespoon pizza sauce and 1 tablespoon cheese. Add the toppings (pepperoni or ham or any toppings you want to put on your pizza).

3.Put the microwavable paper towel on the microwavable plate. Put muffin halves on paper towel.

4.Microwave on High for 30 to 45 seconds or until cheese is melted. Use the pot holders to take plate out of microwave. Cook pizzas for 2 minutes before eating!

ENJOY!!!


What a great fun way to make pizza with your kids. All they need is a little bit of help from you and they can do most of this by themselves!!

Tonights Dinner:

I am thinking tonight I am going to make some pizza! Friday nights have always been Pizza night but we have not done it for awhile and we always get the frozen kind at the grocery store. I think tonight the kids would have fun making their own. I am debating on making a big pizza or small pizza's! I bet they would enjoy the small ones. I am going to find a good recipe and get it posted!!

String Bean Potato and Ham Soup and Cheddar Cheese Bread.

This is what I am cooking tonight!! Hope the kids enjoy. After the day we had a nice bowl of comforting soup will be Great!!!


String Bean Potato and Ham Soup and Cheddar Cheese Bread


String Bean Potato and Ham Soup

1 pound fresh string beans
1 pound new potatoes; cut into fourths
1 cup ham, diced
4 cups water
4 bouillon cubes
¼ cup flour
¼ cup parmesan cheese
1 ½ cups milk
Salt and pepper to taste

In a large pot bring string beans, potatoes, water and bouillon cubes to a boil, reduce heat and simmer 20 minutes or until potatoes are tender.
In small bowl mix together flour, cheese and milk with a fork until well blended; add to pot and cook about 5 to 10 minutes longer. Add salt and pepper to taste



Cheddar Cheese Bread
2 cups sifted all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
½ teaspoon salt
¼ cup butter
1 1/2 cups shredded cheddar cheese
1 ½ teaspoon Italian seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup milk
1 egg
Preheat oven to 350⁰F. Lightly grease a 9x5x3 inch loaf pan.
Sift together flour, sugar, baking powder and salt into a large bowl. Using a pastry blender or two knifes, cut the butter into the flour mixture until mixture resembles coarse crumbs.



Add the cheddar cheese, Italian seasoning, garlic powder, onion powder and cayenne pepper to the flour mixture in the bowl; toss with a fork until well blended.



In small bowl; combine milk and egg. Add to flour mixture all at once; stir with a fork just until all dry ingredients are moistened. Do not over mix.



Spread batter evenly into prepared loaf pan.



Bake in center of oven for about 40 minutes or until a toothpick inserted in center of bread comes out clean.
Remove from oven and cool 10 minutes on wire rack; before removing from pan. Brush with melted butter and serve.

Beef Enchiladas

The kids favorite so far! They asked for it the night after and I had leftovers and they loved it so we did not have to make dinner! :)



Beef Enchiladas
1 pound ground beef
8 flour tortilla (soft taco size)
Red Enchilada Sauce (recipe follows)
3 cups cheddar cheese; grated

Preheat oven to 350⁰F. Lightly grease a 9x13 inch baking dish.

Prepare enchilada sauce; set aside.



In a large skillet over medium-high heat brown ground beef; drain. Add 1 cup enchilada sauce stirring until heated thoroughly.
Spread about 1 cup sauce in the bottom of prepared baking dish.

In a microwave oven warm tortilla for 30 to 60 seconds. Spoon about 1/3 cup beef filling in center of each tortilla top with 1 tablespoon grated cheddar cheese;



starting from any end roll up and place in baking dish; repeat with remaining tortilla.



Pour remaining sauce over rolled up tortilla in baking dish;



top with remaining cheese.



Bake for 25 to 30 minutes.

Red Enchilada Sauce
2 small cans tomato sauce
3 cups water
4 tablespoon flour
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
3 tablespoon chili powder


In a saucepan, combine tomato sauce, water, flour, and garlic, onion and chili powders. Cook, stirring constantly, until mixture boils and thickens. Remove from heat.
